Chilau Crab Boil with Garlic and Shallot Butter Sauce

A perfect day for a seafood boil. Instead of the huge pot in the backyard this time around I went with the simple approach in the kitchen with King Crab, Snow Crab, Shrimp, Potatoes, Eggs and Sausage. The Boil Bomb makes it super easy to whip up a boil quickly in a small pot in the kitchen or a huge cooker outside. This recipe is to suite my 8 quart dutch oven but feel free to put your spin on it and throw whatever seafood, meats and veggies you want in that delicious water!

Corona Garlic Crabs

This meal was created as a coping mechanism. Covid-19 aka Corona Virus lead us to social distancing and comfort food was needed to brighten the day. To put it simply "when life gives you Corona, makes Corona Crabs", pun intended. :)  This was a different take on garlic crabs where I decided to use beer, garlic and our Chilau Garlic Pepper and Original seasonings to drive the flavor vs. using our go-to Boil Bomb which was out of stock at the time. Flavor turned out amazing!

Yellow Curry Chicken with potatoes and Chilau

This curry recipe turned out excellent! I usually prefer chicken thighs but the breast worked out well as there were no thighs available. Curry is one of those dishes that can be intimidating to some. Using this approach it was easy and quick, and didn't require a ton of ingredients. Since are currently under quarantine for Covid-19 and practicing social distancing having a delicious meal will put a smile on your face! :) 

Surf & Turf BBQ with Baby-back ribs, Shrimp and a Sweet Tangy Mustard Sauce

I'm often asked is Chilau good with other meats besides seafood and my answer is always, "Yes!" Though Chilau was inspired by a seafood based recipe it has the essential flavor profile that is universal to amazing flavor. Onion, Garlic, Chile Peppers and spices like black pepper, cumin, mustard and celery are stables in many cooking styles. For this particular recipe I wanted to display how you can elevate your BBQ with Chilau Seasonings as well as create an amazing sweet and tangy honey mustard bbq sauce. I decided to go with the open faced sandwich approach but the mustard bbq sauce and seasonings can fuel your entire BBQ Festivities.

Seafood Rice (kinda like Paella) with Lobster, Shrimp, Mussels and Smoked Sausauge

Very similar to Paella this seafood rice with lobster, shrimp, mussels, and sausage is super easy and very flavorful. Get creative with the seafood and veggies you add for virtually unlimited flavor combinations!

Creamy Shrimp'n Grits with Chorizo Sausage

I get asked all the time, What is the recipe in that picture!?!?! It's similar to our bisque recipe with the addition of cheddar cheese and chorizo sausage. It's super easy to make and great over grits or rice!     

West Coast Style Cioppino Seafood Stew with Chilau Sauce

The cooking style of seafood stew varies from city to city, each using their own unique twist. Every coastal area has a signature seafood stew and west coast Cioppino, popular in San Francisco, is one of them. I noticed the similarities to Tampa Style Crab Chilau so I decided to give it a shot, the results were amazing! I used mussels, clams, Dungeness crab and salmon, then served it up with some crusty bread! Click the link for the full recipe! 

Lobster Ramen with Chilau Sauce

One of the best recipes I have ever made!!! Since my days of microwaving those plastic packs to experiencing chef-crafted ramen at a restaurant or food truck ramen has always been one of my favorite foods. Recently I saw an instagram post of lobster ramen with a creamy broth. I knew immediately how I would recreate that dish using chilau sauce. I prefer the Citrus flavor in cream-based dishes but if you happen to not have that flavor on hand Original or Gumbo will do it Justice. 

Marinated Pan Fried Snapper with Citrus Glaze

Snapper, in general, is highly celebrated in the Caribbean and this pan-fried approach lends itself well to large family dinners. The Citrus glaze is sweet and garlicky with a little heat that really brings out the flavor of the fish. Serve with rice, grits or straight up! Delicious!

Roux based Seafood Gumbo with Dungeness Crab, Shrimp and Smoked Sausage

  Our take on the roux based New Orleans style gumbo takes a little longer than our usual 30-minute recipes but you will be delighted at the flavor Chilau Sauce adds with the concentrated "Trinity" flavor in Chilau Gumbo! 

Blackened Sea bass with Chilau Garlic Pepper Cream Sauce

  There are times when you plan out recipes well in advance and other times when you wing it! This recipe was one of those occasions! I had some sea bass filets and some chilau sauce on hand and that was all I needed for a quick meal. I didn't bother making any rice or pasta to serve with it since I'm currently on a low carb diet. It turned out fantastic with some heat! You can use any flavor of Chilau with this dish. The seasoning used is a special chilau blend (coming soon...) but feel free to use your favorite fish or blackening spice for this recipe.

Deviled Crab Corn Bread Dressing with Chilau Sauce

One of my favorite foods during Thanksgiving and Family dinners is cornbread dressing (stuffing), usually enjoyed next to a juicy turkey or succulent collard greens. This twist on the Tampa Bay staple Deviled Crab ads a new twist to dressing that makes for the perfect side item to spice things by adding crab and kick to the party. Feel free to put your spin on it with choice of meats, veggies, and seafood. The pan will disappear fast so make sure you get your corner first! :)
