Shrimp and Sausage Chilau

This recipe represents the basic components for traditional Tampa style Chilau accept I only used shrimp and sausage in this recipe, no crab. Feel free to make the base your own and experiment with the meats and veggies to create new recipes. This is the recipe featured on the side of the Original (blue label) bottle. Many of our fans find the flavor very similar to Shrimp Creole. 

Chilau Jamalaya with Jasmine Rice Shrimp and Sausage

In this addition I decided to add a Jambalaya spin on the same recipe I use for chicken and rice by swapping out the chicken for shrimp and sausage with our Gumbo Chilau Sauce which has that enhanced “trinity” flavor. This would also be a great recipe to try with some of our seasoned rice selections. 

Oxtail Stew with Butter Beans

There is something to be said about the richness of savory oxtails cooked in the perfect gravy. I decided to put a little spin on this recipe by incorporating a Louisiana style roux with the base along with Chilau Gumbo sauce. It results in the richness of Gumbo but with the rich beefy flavor of oxtails. This recipes can also be made with Chilau Original. 

Chicken and Sausage Bowtie Pasta

Sunday Night Dinner, super easy and quick. There are lots of options for substituting other meats, veggies and low carb options. Just use Chilau as the base! Get fancy without it taking ages in the kitchen with this Bowtie pasta recipe. 

Garlic Pepper Shrimp with Three Cheese Tortellini and Andouille Sausage

This recipe came about as a result of canvasing my pantry and fridge for dinner possibilities. I just so happened to have some jumbo shrimp and andouille sausage. The decision was then to decided whether to serve it over rice or pasta. Fresh three cheese tortellini was a different spin I decided to use. This recipe will also be excellent using a creamy base similar to our Shrimp and Grits recipe.

Chilau Crab Boil with Garlic and Shallot Butter Sauce

A perfect day for a seafood boil. Instead of the huge pot in the backyard this time around I went with the simple approach in the kitchen with King Crab, Snow Crab, Shrimp, Potatoes, Eggs and Sausage. The Boil Bomb makes it super easy to whip up a boil quickly in a small pot in the kitchen or a huge cooker outside. This recipe is to suite my 8 quart dutch oven but feel free to put your spin on it and throw whatever seafood, meats and veggies you want in that delicious water!

Chicken and Rice in cast iron skillet

Chilau Sauce and seasonings are excellent for non-seafood based recipes. I stumbled on this extra large cast iron skillet recently and decided to make chicken and rice in it. For this recipe I went with chicken thighs as they maintain their juiciness throughout the cooking process. This recipe would work great as well with seafood and other meat selections. Excellent flavor!

Corona Garlic Crabs

This meal was created as a coping mechanism. Covid-19 aka Corona Virus lead us to social distancing and comfort food was needed to brighten the day. To put it simply "when life gives you Corona, makes Corona Crabs", pun intended. :)  This was a different take on garlic crabs where I decided to use beer, garlic and our Chilau Garlic Pepper and Original seasonings to drive the flavor vs. using our go-to Boil Bomb which was out of stock at the time. Flavor turned out amazing!

Yellow Curry Chicken with potatoes and Chilau

This curry recipe turned out excellent! I usually prefer chicken thighs but the breast worked out well as there were no thighs available. Curry is one of those dishes that can be intimidating to some. Using this approach it was easy and quick, and didn't require a ton of ingredients. Since are currently under quarantine for Covid-19 and practicing social distancing having a delicious meal will put a smile on your face! :) 

Surf & Turf BBQ with Baby-back ribs, Shrimp and a Sweet Tangy Mustard Sauce

I'm often asked is Chilau good with other meats besides seafood and my answer is always, "Yes!" Though Chilau was inspired by a seafood based recipe it has the essential flavor profile that is universal to amazing flavor. Onion, Garlic, Chile Peppers and spices like black pepper, cumin, mustard and celery are stables in many cooking styles. For this particular recipe I wanted to display how you can elevate your BBQ with Chilau Seasonings as well as create an amazing sweet and tangy honey mustard bbq sauce. I decided to go with the open faced sandwich approach but the mustard bbq sauce and seasonings can fuel your entire BBQ Festivities.

Seafood Rice (kinda like Paella) with Lobster, Shrimp, Mussels and Smoked Sausauge

Very similar to Paella this seafood rice with lobster, shrimp, mussels, and sausage is super easy and very flavorful. Get creative with the seafood and veggies you add for virtually unlimited flavor combinations!

Creamy Shrimp'n Grits with Chorizo Sausage

I get asked all the time, What is the recipe in that picture!?!?! It's similar to our bisque recipe with the addition of cheddar cheese and chorizo sausage. It's super easy to make and great over grits or rice!
