Southern Red Beans and Rice Recipe

Ingredients

  • 1 lb dried red beans (soaked overnight) or 4 cans (15 oz) of cooked red beans (drained)
  • 1 Jar Chilau Stew Base (Creole Trinity or Original Southern Style)
  • 1 lb Andouille Sausage or choice of smoked sausage
  • 4 pieces smoked turkey necks
  • 1/2 cup diced onions
  • 1/2 cup diced red bell peppers
  • 1/2 cup diced green bell peppers
  • 32oz chicken stock or broth (water or other broth/stocks are options)
  • Salt and pepper to taste
  • 2 TBSP unsalted butter
  • Chopped green onions for garnish (optional)

Preparation

  1. If using dried red beans, start by soaking them in water overnight. Drain and rinse the soaked beans before cooking. Alternatively, you can use canned red beans for a quicker version of the recipe.
  2. In a medium pot or Dutch oven, heat the butter over medium heat. Add the diced onions, bell peppers, and celery. Sauté the vegetables until they become tender and slightly caramelized, about 5-6 minutes.
  3. Add the sausage to the pot and cook for another couple of minutes until the sausage gets a little crisp on the edges.
  4. Stir in the Chilau Stew Base and chicken stock
  5. If using dried red beans, add them to the pot and ensure liquids cover the beans by about an inch, if not add water. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer until the beans are tender. If using canned beans, simply add them to the pot and proceed to the next step. TIP: At this point, you can add everything to a crockpot then set it and forget it!
  6. Taste the base and adjust the salt to your preference. 7. While the beans are simmering, prepare the white rice according to the package instructions or your preferred method. 8. Once the red beans are cooked and the flavors have melded together your Southern Red Beans and Rice are ready to serve!
