- 5 dried red chile peppers (de Arbol)
- 1 Tbsp chopped garlic 2 shallots chopped
- 1 Green Bell Pepper Chopped
- 1 Red Bell Pepper Chopped
- 2 Bunches Green Onion (halved)
- 3 cups mushrooms (roughly chopped)
Seafood:
- 6 lobster tails (or seafood of choice)
- 2 lbs jumbo shrimp
Noodles: 10 helping Ramen noodles
Preparation
- Sauté Veggies: Heat 1/2 cup canola oil and 1 teaspoon sesame oil in a large stock pot or Dutch oven over medium-high heat. Sauté ginger, garlic, shallots, bell peppers, chile peppers, and mushrooms until softened and fragrant.
- Create the Broth: Add 2 cartons of stock, Chilau Stew Base, fish sauce, and lemon juice to the pot. Stir well and bring to a rolling boil. Reduce heat and let it simmer for 15 minutes to infuse flavors.
- Cook the Lobster: Add lobster tails to the simmering broth and cook for 5 minutes. Remove lobster and place in an ice bath or set aside to stop cooking.
- Strain the Broth: Strain the broth to remove all veggies and ensure a clear, flavorful liquid. Return strained broth to the pot and keep warm over low heat.
- Cook Noodles: In a separate pot, cook ramen noodles according to package instructions (without seasoning packets). Drain and set aside.
- Assemble the Ramen Bowls: Divide cooked noodles into bowls. Add lobster, shrimp (cooked directly in the hot broth for 2–3 minutes), and ladle hot broth over the top.
- Garnish and Serve: Garnish with chopped green onions, fresh lime wedges, and optional soft-boiled eggs. Serve immediately and enjoy the bold fusion of Southern and Asian flavors. T
Tips: Substitute lobster and shrimp with chicken, pork belly, or tofu for different variations. For extra heat, add a couple tablespoons Boil Base or chili oil. This Southern-inspired Ramen is the perfect meal to impress your guests or treat yourself to a unique and flavorful dinner. Try it today!
